Strength and dexterity both increase your melee attack. There are some unavoidable attacks no matter how high your defense or dodge, so armor is the most reliable protection. You also take a staggering -1000 penalty to dex when stunned, unless you have immunity. Armor is the top priority for Warriors more than defense.
The ultimate Edition is the complete edition, that contains every single DLC and expansion. Origins is still my favourite in the series and imo DA2 is the worst one, so personally I think it's worth completing, but I guess it depends why you're playing it. I have the ultimate edition on steam and had to edit the game file as the first poster mentioned theres instructions on how do so on the dragon age wiki.. Also you may have already but make sure theres is a space before the minus i believe(it may be after just know its there somewhere at the front)

The UI can be a little finicky in DAO. Typically, you need to drag the item to be "quick barred" into just the right spot in the square in order for it to slot correctly. If you're playing at a high resolution, this can sometimes be a little troublesome because the boxes are smaller. However, it should not be too difficult to do.
